Cooking is definitely something that has been instilled in me from my family and it’s something I love to do…usually! Lately, my diet has consisted of a few things: fruit, bagels & cream cheese, pasta, and ice cream with a spoonful of Nutella. It’s not exactly the five-color diet or the healthiest by far, but it’s all this pregnant mama has been craving. Well, today I reached a new low point.
As I was eating my dinner of mac & cheese from a box (my all-time fave) tonight, I realized that just a few hours earlier I had also had mac & cheese for lunch. In my defense, the mac & cheese from lunch was leftover butternut squash mac & cheese which at least has veggies in it! I decided that while we do love pasta in this house, my daughter and husband (and me!) need a little culinary variety in our lives these days! Not to mention, we could probably use a little more green on our plates!
Meal planning is definitely not a new thing and I do my best to plan ahead before hitting the grocery store. This week, I’m taking meal planning to the next step and posting the meal plan in the kitchen. Ooooooooohhhhhhhhh! I know….earth shattering idea! Again, not a new idea, but I’m just jumping on the band wagon now! I think posting the plan will help keep me on track, remind me to prep ahead, and prevent the hasty speed dial to Papa John’s. I also hope that sticking to the plan will keep me out of the grocery store as often as I am there now!
